I will never forget being on my Honeymoon in Tasmania catching my first Rainbow Trout.

Cooked fresh for me and my new wife at a local Launceston Restaurant, it was served char grilled with the skin peeled back, topped with a knob of slowly melting lemon parsley butter.

It was simple, absolutely delicious and easy to do at home.
