School Prawns are a small Estuarine prawn with a very sweet flesh.
They are served whole with the heads and shells intact lightly floured with a salt & pepper dust and deep fried until the shell goes crunchy.
Being a small prawn the shells are very thin and turn crispy when fried. The flavour is fantastic and lends towards Asian flavours of fresh chopped chilli and a sprinkling of chopped spring onion or a lemon Aioli. Beautiful washed down with a white wine or cold beer. Combine with whitebait to create an excellent duo.
